This week John & Amy speak with Renee Erickson. Renee is a James Beard award winning Seattle based chef & restaurateur, owning & operating a family of restaurants under the umbrella of Sea Creatures. Renee has published two beautifully written & designed cookbooks. The first, A Boat, a Whale, a Walruswon a 2015 PNB book award & her newest book, Getaway, Food and Drink to Transport Youwas selected as the #1 cookbook of 2021 by Amazon.
John, Amy & Renee address the general exhaustion that came with operating a restaurant in the pandemic & the responsibility that they have to their staff. Renee shares her process & the challenges of writing The Getaway& how aesthetic plays a role in both her books & restaurant design. We learn how Renee contributes to a better food system through Smart Catch, a sustainably sourced seafood program & we learn how a trip to Rome in her 20’s changed her career path from artist to chef.
